Lentils and tie blanket and bear mask, oh my!

This week I decided to use the lentils that I had in our pantry because I read that lentils have an abundance of folic acid (358 mcg).  I modified a recipe that I found online, and it was DELICIOUS!!

Sarah's Modified Sweet Potato and Lentil Soup
1) Peel and dice 3 small onions and 2 large sweet potatoes (or more if you want it chunkier).
2) Heat a large pot on medium heat, add 2 T of butter, melt.
3) Put onions and sweet potatoes in pot and toss to coat with butter.  Cook, stirring often for about 10 minutes (until onion is soft).
4)  Add the following spices, then toss to coat:
*unless noted the spices are dried
1/2 t salt, garlic (fresh), ginger
1 t cumin, parsley, coriander
1/16-1/8 t cayenne depending on level of hotness desired
5) Pour in 3 C of veggie broth (or chicken/beef broth)
6) Dump in a 16 oz bag of lentils (I used brown, I've heard the red gets mushier, brown stays whole better), stir
7) Pour in 3 C of water, stir
8) Turn temperature to hot, bring contents to a boil, put on lid, turn to simmer for 30 minutes
9) EAT

Yesterday I started two projects that have been on my back burner for a LOOOONG time.  The one, a tie blanket, I have had the material since 2011!!  But it's done now, and looks great on our glider rocking chair in the family room.

The other project was another pinterest idea, making a year long birthday calendar to help us keep track of all of our family's birthdays.  I finally got it "done", at least until the next baby in the family is born!



Up close of the discs.  I used earring hooks to connect the discs together after drilling a small hole in the top and bottom of each disc (I only broke one!)  I also painted the front and back of each disc to match the color of the frames.  Then I wrote each person's name and date of birth on the disc with a permanent marker.  On the front of the frames I wrote the first letter for the month at the location of each ring.

I attached the rings with hot glue.  

This is the finished product.  I just need to find some pictures of our families to add to the sides, and one of us (Jeri, Reece, and I) for the middle.  

Another project I completed this week was making a mask for Jeri's Halloween costume.  I really wanted him to wear something like this ... 
But, he *wanted* a mask.  So I made one that looked similar to the hoodie in the picture above.  I'm going to add the same color white "fur" to the front of the brown shirt/sweatshirt that he will wear, then he will wear brown pants with it.  I can't wait to get pictures of the final costume.  Reece is going to be an elephant and I'm going to be a penguin - All zoo animals, and animals of which Reece knows the sounds.
