Chicken fried rice recipe

Following the use of a rotisserie chicken I needed a quick meal so we made chicken fried rice off the cuff and it was actually really good!

Ingredients
Rotisserie chicken leftovers (about 1/4 of chicken or whatever you have), chopped into smaller than bite size pieces
1c Minute rice
2 green onions
A small chunk of ginger, finely sliced
1/4 a green pepper, finely chopped
Yellow (or other color pepper), finely sliced
2 eggs
Sesame oil (about 1/2 T)
Soy sauce (2 cap fulls)

Directions
1.  Pour oil in medium heat skillet/wok.
2. In a separate pan cook rice to directions.
3.  Once oil is warm add onion, ginger, peppers and stir fry for a few minutes.
4. Add chicken and stir fry for two minutes.
5. Push everything to one side then add eggs to now empty side of pan.  Scramble eggs until almost completely cooked.
6. Once rice has finished cooking add to wok and stir through.
7. Pour on soy sauce and stir through.
8. Remove wok from heat and eat!
